  1. Preheat the oven to 200˚F. Spray the baking sheets with coconut oil. Rinse and core the apples. Using a mandolin, slice the apples to about ¼ in. Lay the slices flat on the baking sheets. Place the sheets in the oven for about two hours or until the apples are completely dry. In a sealed container these chips can be stored at room temperature for two days.

  1. Preheat the oven to 400˚F. Mix the egg whites and broth in a small bowl. Put bread slices in a large bowl, pour the egg mixture over the slices of bread and let them soak until the liquid is absorbed. Mix in and parsley and meat. Form the mixture into balls of about ½ inch to 1½ inches wide. Brown each meatball on all sides in a nonstick skillet. Bake them for about 15 minutes at 400˚F. Meatballs freeze well, so you can store them frozen for up to a month. Just take one out, thaw in the fridge, or warm it in the microwave.

  1. Blend all the ingredients until they reach a smoothie-like consistency adding extra apple juice or broth as needed. Pour the mixture into an ice cube tray and place in freezer.   1. Preheat oven to 275˚F. Line 2 baking sheets with aluminum foil and spray with coconut oil. Scrub beets and sweet potatoes with a vegetable brush. Using a mandolin, thinly slice the beets and sweet potatoes. Lay slices flat on the baking sheets. Cook them for about 8 minutes, then flip them and cook for another 8 minutes (or until they are crisp).
